Fry aubergine, courgettes, onion, garlic for 5 minutes. Stir in some chilli powder, 2 tsp coriander, 2 tsp cumin seeds, 1 tsp garam masala and cook for 1 minute. Add tomatoes, stock, salt, pepper and cook for 10 minutes. Add chickpeas and cook for 5 minutes.
