This is similar to Korma dishes you get in Indian restaurants. You can sometimes find Korma curry powder. If not, any fairly mild curry powder will do.
1 large onion
Half a cauliflower, washed and cut into florets
1 carrot, peeled and sliced
1 large (540g) tin of new potatoes
1 yellow pepper
1 tin (400ml) of coconut milk
1/2 cucumber, chopped finely (optional)
Slice and fry the onion. Add 2 tablespoons of curry powder and cook for 1 minute.
Add the vegetables and cook for 5 minutes. Stir in the coconut milk and add salt
