This is a really nice side dish for an Indian meal. You need a spice mill to make this dish. The ingredients can usually be found in Asian food shops. A word of warning: when you add the fenugreek seeds to the oil, the fumes make you cough, so make sure you can open a window and escape the kitchen for a while.

4 oz. (100g) white poppy seeds

2 tbsp. oil

2 dried chillies

About 15 fenugreek seeds

1 tsp. Turmeric

1 tsp. Mustard powder

Grind the poppy seeds to powder and add a little water to make a loose paste. Heat oil in a small, heavy pan. The oil needs to be very hot without burning. Add the dried chillies and wait for them to turn black. Add the fenugreek seeds and allow them to turn black (and wait for the fumes to disperse).

Add the poppy seed paste to the pan and also add salt, turmeric and mustard powder. Keep stirring and cooking until the paste turns dark brown.
