This dish is a sort of bubbly bread which accompanies Indian meals. It is really nice served with mango chutney.

4 oz. (100g) plain wholemeal flour

1 tbsp vegetable ghee or oil

2 pinches salt

3 fl. oz. (75ml) hot water

Put flour in a bowl with oil and salt. Add water and mix to form a soft dough. Knead gently, cover with a damp cloth and leave for 30 minutes. Knead the dough again and divide into six pieces. Roll each piece into a 6 inch circle, keeping the others covered to stop them drying out. Heat 1 centimetre oil in a frying pan. Fry one of the pooris on each side for about 15 seconds until it is puffed and golden. Drain on paper towels and keep warm while doing the others.
